Hi, I’m Emma, and this is Just Vegging Out.
I live in Oregon with my husband and our two kids, and most days you’ll find me in the kitchen figuring out what to make for dinner that everyone will actually eat. I’ve been cooking vegetarian meals for years—not because I follow strict rules, but because this is the kind of food that works best for our family.
Vegetarian cooking became part of my life slowly. It wasn’t a big decision or a lifestyle shift. I just started cooking more meals with vegetables at the center, and over time, that’s what felt right. The food was lighter, easier, and still comforting.
In March 2022, I started Just Vegging Out as a simple place to keep track of the meals I was already making at home. At first, it was just for me. Then friends and family started asking for recipes. Eventually, I realized other people were looking for the same kind of food I was—vegetarian meals that feel normal, familiar, and doable on a busy day.

How I Cook and Develop Recipes
I’m a home cook, and I stay very honest about that. Every recipe you see here is cooked and tested in my own kitchen, usually on a regular weeknight. These aren’t restaurant-style dishes or overly polished creations. They’re meals meant to be cooked, shared, and enjoyed without stress.
I focus on:
- Clear, straightforward instructions
- Everyday ingredients you can actually find
- Recipes that don’t require hours in the kitchen
- Food that works for families, not just photos
If a recipe feels fussy, confusing, or unrealistic, it doesn’t make it onto the site.
