This Mexican Cucumber Salad combines crisp cucumbers, sweet corn, creamy dressing, and tangy cheese for a fresh and flavorful side dish.

Ingredients

  • 2 tablespoons mayonnaise
  • 2 tablespoons cotija cheese
  • Zest and juice of 1 lime
  • 1/2 teaspoon elote seasoning or chili powder
  • 1 garlic clove, finely minced
  • 6 mini cucumbers, thinly sliced
  • 1 cup frozen corn, thawed
  • 1/4 cup cilantro, chopped
  • 2 tablespoons red onion, finely chopped
  • Sea salt, to taste

Instructions

  1. In a medium bowl, whisk together the sour cream, mayonnaise, cotija cheese, lime zest, lime juice, elote seasoning, and minced garlic until smooth and creamy.
  2. Add the sliced cucumbers, thawed corn, cilantro, and chopped red onion to the bowl.
  3. Toss everything gently until the vegetables are evenly coated with the dressing.
  4. Season with sea salt according to your taste, then serve immediately or chill briefly before serving.

Notes

  • Feta cheese can be swapped in place of cotija if needed.
  • For the best texture, slice the cucumbers thinly before mixing.
  • Allow the salad to rest for a few minutes before serving so the flavors blend together.
