- Method: Stovetop
- Meyer lemons, zested and juiced
- Granulated sugar
- Egg yolks from large eggs
- Unsalted butter, cut into cubes
- Pinch of salt
- Combine the sugar, Meyer lemon zest, and lemon juice in a medium saucepan.
- Warm the mixture over medium heat, whisking often, until the sugar dissolves completely and the liquid is hot but not boiling.
- In a separate bowl, whisk the egg yolks until smooth and fully blended.
- Gradually pour about 1/2 cup of the warm lemon mixture into the yolks while whisking constantly to temper the eggs.
- Return the tempered egg mixture to the saucepan and whisk until evenly combined.
- Cook over low heat, stirring continuously, until the mixture gently thickens and warms through.
- Increase the heat slightly and continue whisking until the curd becomes creamy, lightly foamy, and thick enough to coat a spoon.
- Remove the pan from the heat and stir in the butter cubes and salt until silky and fully melted. Serve warm or chill before using.
Notes
- Add the hot lemon mixture slowly to the egg yolks to prevent curdling.
- A silicone whisk or spatula helps avoid any metallic flavor from the citrus.
- The curd can be refrigerated in an airtight container for 7-10 days.
- Freeze extra curd for up to 3 months and thaw in the refrigerator before serving.
