Strawberry Cheesecake Ice Cream

This Strawberry Cheesecake Ice Cream blends roasted strawberries, tangy cream cheese, and crunchy graham crackers into a rich homemade frozen dessert.

  • 1 quart fresh strawberries, hulled and quartered
  • 3/4 cup granulated sugar, divided
  • 1 tablespoon balsamic vinegar
  • 6 ounces cream cheese, softened
  • 3/4 cup whole milk
  • 1/2 cup heavy cream
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons light corn syrup
  • 1/4 teaspoon fine sea salt
  • 1 1/2 teaspoons vanilla extract
  • 4 whole graham crackers, roughly chopped

Instructions

  1. Heat the oven to 300°F and line a rimmed baking sheet with parchment paper or a silicone mat.
  2. Combine the strawberries with 1/4 cup of the sugar and the balsamic vinegar. Spread the berries into a single layer on the prepared pan.
  3. Roast until the berries soften, darken slightly, and release their juices. Transfer everything to a bowl and mash gently, leaving a few small fruit pieces. Chill until cold.
  4. Add the remaining sugar, cream cheese, whole milk, heavy cream, lemon juice, corn syrup, sea salt, and vanilla extract to a blender or food processor. Blend until completely smooth.
  5. Pour the ice cream mixture into a bowl, press plastic wrap directly onto the surface, and refrigerate until well chilled.
  6. Churn the cold mixture in an ice cream maker according to the machine instructions. During the final few minutes, add the roasted strawberries and chopped graham crackers.
  7. Spoon the ice cream into a sealed freezer-safe container. Press plastic wrap against the surface and freeze until firm before serving.
